I'll keep it simple - the obvious answer is you can use the same baits that you use in the rest of the water column. For me, fishing shallow water means sight casting and that usually equates to a subtle presentation like a small profile soft plastic (Confidence Baits Little Tubes, Floating Birds, 4" senkos, etc.) are killer for me personally. Others may prefer a different approach.

As far as fishing all day long, I take the approach of packing a small lunch, and I will scout the area via Google or just paddle around and look for a good rest spot about mid-day. It doesn't even have to be anywhere I can actually get out and beach the kayak. It could be a shallow flat area or a large rock in the middle of the river. Anywhere basically to stand and stretch or sit in a traditional manner to take the strain off of my lower back.

A quick 20-30 minute break mid-day can go a long way to helping make your all day trip easier on your body and re-energizes/ re-centers your focus for the second part of the trip.

Thats for you, you can sight fish in maybe 3-4 places in the delaware maryland area for largemouth, delaware in total is a mud hole. But if your water is clear enough those will work great or a big creature bait or jig like bed fishing. If you have stained to muddy water, flipping, dragging a C-rig, a jig, spinnerbait, chatterbait, or frogs ( hollow body, spro, koppers etc, or a soft body like a rage frog, horney toad, or a stanley ribbet. )

Most of my better fish have come around midday, just keep adjusting your presentation and keep your confidence up.
In the shallow water lakes I fish the fish tend to move tighter to cover at midday. One of the best places can be between different types of shoreline cover. Like when you have light grass or lillypads against the shore then a small gap with an outter row of reeds. Great area to hit with suttle spinnerbaits or weightless plastics.
Pitching The lil Bombshell Turtles are Killer for this also, especially around spawning time ;)
