For Channels, I haven't found a better bait then chicken liver. Also, I ask the local grocery seafood counter if they have any spoil or throw away shrimp. A peeled raw shrimp gets hammered.

I have always used chicken livers and always catch fish with them.

I look for wind blown points and bait the area with range cubes. Then use my secret dough bait under a cork. I slay them in Texas this way.
