I think you are right in not jumping into it. Buying a kayak is an investment and you want to make the best choice that is going to suit your needs. If you buy something in a rush and are unhappy with it now you are stuck trying to get rid of it for something better.
You are going to want something that is comfortable over time on the water (ie you can fish out of it for a few hours and your back doesn't kill you) and something that is stable.
I like to stand and fish so that is a must for me. And I like the idea of a sit-on-top with scupper holes because I like the option of going in big water and not worrying about capsizing.
You also have to think of things like storage and transportation so size and weight are considerations.
And of course price is also a factor but here are some models I'd think you'd like:
